1 lb Ground beef
1 small Yellow onion, chopped
3/4 cup Water
1 Egg, beaten
1 pkg Williams Meatloaf Seasoning
1/2 cup Ketchup
2 tbsp Brown sugar, packed
2 tsp White vinegar
1 pkg Instant mashed potatoes, prepared according to package directions
Chopped fresh chives, for garnish
Preheat oven to 425°F. Lightly grease a 12-cup muffin tin with cooking spray.
Combine ground beef, onion, water, egg and Williams Meatloaf Seasoning in a large bowl. Divide mixture evenly into each muffin cup.
Combine ketchup, brown sugar and vinegar in a small bowl and evenly spread over each muffin. Bake for about 25 minutes or until an internal temperature of 160°F has been reached.
Meanwhile, prepare mashed potatoes and set aside. Top each muffin with a dollop of mashed potatoes. Garnish with chives and serve.
